Lunch
Further to yesterday's post about healthifying, this is what I am having for lunch today, and a pretty typical example of the food I've been eating of late. It's two slices of Burgen bread spread with a little light ricotta, along with rocket, and some mushrooms cooked up in a non-stick frypan with a handful of cherry tomatoes.
*Apologies for the photo quality - my ex has gone to New York for a holiday, and took his camera (which I like to think of as my camera, since I'm the only one who generally uses it). How dare he! He'd better bring me back a Niagara Falls snow globe!

It's a bit sweet at first (oats, I guess) but you get used to it and it has a nice gutsy texture. Their fruit and muesli bread is good too.
Sarah, it was sooo nice. Noodles is staying overnight at a friend's place tonight and I'm half thinking about having this again for dinner, maybe just adding a poached egg or some asparagus or something.
Looks so yum and filling! I'll make it this weekend for brunch maybe :)

Yum, this looks delicious! I would chuck in some fetta cheese too, but I always need a bit of cheese in my food!
